In Greece we eat a seasonal menu and Kolokithokeftedes is a wonderful courgette dish, a treat in fact as its lightly fried in olive oil. It's an easy recipie to try and i've added a Briami, greek summer vegetables cooked in the oven also for you to try. All below

Zucchini ball Ingredients:
Heat half of the olive oil in a heavy skillet. Scoop out the mixture with a tablespoon and shape into round, flat fritters. If the mixture is too wet to shape, add a little flour. Cook the fritters over medium heat, 5 minutes on each side until golden brown.
Remove the fritters from the pan and place on paper towels to absorb the oil.
Squeeze a little lemon on top and serve hot. Enjoy!
Briami – Baked Summer Vegetables
This is so good for you and the wonderful colours of fresh seasonal vegetables is a feel good recipie that needs hardly any extra seasoning to taste delicious so its the perfect dish for any table. Briami , also known as Tourlou-tourlou, is a traditional Greek vegetarian dish and perfect for when your garden produces more zucchini than you can handle!
Baked Summer Vegetable Recipe Ingredients:
Slice all vegetables in 1/2 inch pieces.
Arrange in baking pan.
Add olive oil and one cup hot water.
Sprinkle with salt, pepper and parsley.
Cover and bake in moderate oven for 1 1/2 hours.
Uncover for the last 30 minutes.
Some people like to give it a little extra flavor by sprinkling some Feta cheese on top.
